Prime Rib with Loaded Mashed Potatoes

This is the perfect meal if you’re trying to impress a date, or if you’re trying to prove to your in-laws that you actually can cook! Between me and you, this recipe is super-easy, and you’ll end up with a restaurant-quality meal.

Recipe

PRIME RIB DINNER WITH LOADED MASHED POTATOES

Servings: 8

Prep time: 40 minutes

Cook time: 4 hours 20 minutes

Total time: 5 hours


Ingredients

For Prime Rib

  • One 6-pound prime rib roast

  • 2 tablespoons vegetable oil

  • Garlic salt to taste

  • Pepper to taste

  • Steak spice (optional)

For Loaded Mashed Potatoes

  • 2 heads of garlic (a lot of for some people, so feel free to dial it back)

  • 6 pounds Idaho potatoes, peeled and quartered

  • ½ cup of butter

  • 1 cup grated sharp white cheddar (or get creative with your choice
    of cheese)

  • 1½ pounds of cooked bacon, julienned

  • Salt to taste

  • 1 cup sour cream (optional)

Directions

  1. Heat oven to 450˚F.

  2. Place the meat in a roasting pan, rib side down. Grease the pan lightly with vegetable oil and add a tablespoon on top of the roast.

  3. Season the roast with garlic salt, pepper and steak spice.

  4. Place the uncovered roast in the oven and cook for 1 hour.

  5. Once the hour is up, turn off the oven, but leave the roast in the oven and do not open the oven door.

  6. Leave the roast in the oven undisturbed for 3 hours.

  7. For the last hour, turn the oven back on to 350˚F to finish cooking.

  8. Cut off tops of 2 garlic heads and wrap them in foil.

  9. Place the garlic in the oven for 30 minutes.

  10. Once the garlic has cooled, remove the flesh and dice it up.

  11. In a large pot, boil potatoes in salted water for 15 to 20 minutes, until they’re tender for mashing.

  12. Drain water and place potatoes back in the pot.

  13. Add garlic, butter, cheese, bacon, salt and pepper, and sour cream if you choose.

  14. Blend ingredients with an electric mixer until smooth and creamy.

  15. Serve with gravy or au jus and enjoy!

A Cabernet Sauvignon. (Ideally from Italy, since Italians do it better!)
